Hey hey! Happy Friday! Did you have a good week? What’s on the agenda this weekend? Inquiring minds (uh, mine, at least) wanna know. For me? Well, I think today and Sunday are “work” and Saturday is a little more “play”… because balance. As usual, let’s kick off this nice, balanced weekend the right way by looking back at some of our favorite things from the week.
  • Experimenting in the kitchen

This is one of my favorite things to do, and it pretty much falls to the wayside when I’m studying for exams. With all that nonsense out of the way for a couple of weeks, I’ve taken advantage of a little bit of the extra time to play. I’ll be honest and say these little peanut butter cookies aren’t perfect (yet!), but they’re not bad to have around… especially with those huge chunks of chocolate. 😉

  • Alex and Ani (Project)RED Kindred Cord

You can kinda see it in the corner of the above photo (or you can click the link to actually see it…), but my mom gave it to me last weekend. It’s extra dainty and just a nice little reminder of love. And, of course, it’s for a good cause.

  • Hot Power Fusion

Last night, I was craving yoga, but not super vigorous strength-building yoga. I just needed to calm down and focus on the movements, ya know? Well, this was perfect for that. Like, whoa. It was still challenging (and so hot), but it was mostly about flowing through different balance progressions and not about long holds. I would definitely do it again.

Yoga makes me all sorts of hungry, so when I got back to the apartment, I needed food fast. I threw together quick dinner of a mahi mahi burger, sweet potato, bell peppers, and this avocado toast, which was pretty much the highlight (even though it was all really tasty). Unlike my last avocado, the ones I got this week were amazing – perfect for everything from salad to avocado toast to just eating plain with a little salt and pepper.

    I love avocado with eggs. I wish I could eat it forever. Also, this chocolate chunks looks heavenly for me. Good job!

    Experimenting in the kitchen is DA best, and you REALLY know how to do the most beautiful ‘avocado’ flowers! :))) My favorite social media accounts actually are many of the BGB Community gals + fellow sisters in Christ who are recovering from eating disorders… 🙂

    Kitchen experimenting is one of my favorite things to do when I have some extra time, too! Those PB cookies look great, even if just for the melty chocolate chips. I’m having a majorrrrr chocolate PB craving now! (although when am I not craving that? haha!)

    Yummy, Ellen, those cookies look delectable!! Will you post them when you perfect them?? ??. I love avocado toast (though I’m super-picky about my bread), but I love avocado on just about everything. Probably my favorite is either as a spread for a lunchmeat sandwich or as guac and chips. ??

      Thanks, Hannah! Yep – once they’re freaking awesome I will definitely post them! Mmm chips and guac sound pretty good right now. Except… when do they not? 😉

      I just toasted up some bread, sliced about a third of an avocado, and sprinkled it with salt and fresh-ground black pepper! Simple and delicious!

      Thanks, Emily! Oh, man. I’ve been seeing avocado roses all over the place, and I have a feeling it’ll take a while for me to get the hang of those. But I’m still going to try 😉

    I love avocado on toast too! I throw an egg over easy on top too and it is delish. Putting avo on rice cakes over making a burrito bowl with rice, beans, and lots of veggies is delish too 🙂

    I’m with you, I loveeeee experimenting in the kitchen! I love Alex and Ani bracelets and that one is so pretty!

    Right now my favourite way to eat avocado has to be in guac form on top of anything 😛

    That dinner sounds seriously delicious! I love avocado toast, but my favorite way to eat avocado is guacamole made with tons of onion and Greek yogurt (although I have to use mouthwash after eating it so that I don’t drive people away with my breath, haha :P)

    This week I was loving mug cakes as I was too busy studying to bake but was craving sweets during my late-night study sessions! I hope you have a lovely, balanced weekend, Ellen! 🙂
