Fun fact: yesterday started off kind of horribly. I walked on the treadmill and responded to blog comments and watched Friday Night Lights, and everything was fine. But then I started foam rolling and basically had to refrain from sobbing, and not because it hurt (which it did, but that’s not the point) or anything sad was happening on FNL. It was inexplicable and I couldn’t shake the feeling of just wanting to bawl. I guess I’ve had a few bad pain days lately and maybe that all adds up? Who knows.

However, I also needed to shower, pack food, and get all my stuff together for yoga teacher training in an hour. And I really didn’t want to go to teacher training. I wanted to crawl in bed and cry and sleep.

I am a joy.

So, as any rational adult person would do, I called my mom. You knew it was coming. A 20-minute conversation about dentists and drugs was enough to at least make me feel like a person again. I made my tea, swiped on mascara, packed my bags, and headed out the door for a day I was so not thrilled about.

And 6 hours of teacher training later, I had the biggest smile on my face and was basically like new… minus the need for some food.

I don’t get myself. It’s okay. What I will say is that yoga teacher training is challenging and empowering, I love it, and I owe you an update on that.

Speaking of, I owe you updates on life and want to write things that don’t fit into my current posting schedule. So bear with me as I figure out what works with my life and thoughts. I’m thinking of adding a post a week, but we’ll see. As always, if there’s anything you want to know, reach out and tell me! I like writing things you’re interested in. 🙂

Anyway… yesterday, teacher training was the thing I didn’t know I needed. It snapped me out of my funk, at least for the time being.

However, on Saturday, this giant cookie was exactly what I needed. I mean, I had a chocolate bar hanging around that I could polish off if all I needed was chocolate (update: that happened), but what I really wanted was a warm, gooey cookie. And I really don’t need a whole batch sitting around. Baked goods don’t stand a chance against me.

This cookie is no exception. It’s approximately the size of my face, full of chocolate and almond butter, and I savored the whole thing as pre-dinner dessert. 

That’s totally a thing.

Some days, you just need a giant chocolate chip cookie. This version is made with good-for-you ingredients to give you just that, in all it's warm, gooey goodness.

Ingredients
  1. 1 large egg yolk
  2. 2 T. natural almond butter*
  3. 2 T. almond flour
  4. 1 T. coconut flour
  5. 1-2 T. coconut sugar**
  6. 1-2 T. unsweetened almond milk***
  7. 1/4 t. baking soda
  8. 1/8 t. salt
  9. 1/2 t. vanilla extract
  10. 1.5 T. mini chocolate chips
Instructions
  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper
  2. In a small bowl (I used a cereal bowl), whisk together the egg yolk, almond butter, almond flour, coconut flour, and coconut sugar. It will be very thick and probably won't combine that smoothly. It's okay!
  3. Add almond milk 1/2 T. at a time until you reach a cookie dough consistency. I used 1.5 T. It will depend on your flours and how absorbent they are.
  4. Mix in the baking soda, salt, and vanilla extract.
  5. Fold in the mini chocolate chips, maybe saving some to sprinkle on top, maybe adding extra to the top. No one else can tell you how much chocolate you need in your life.
  6. Scoop the cookie dough onto the prepared baking pan. Flatten it into a circle, but no need to make it perfect.
  7. Bake for 20-22 minutes, until cooked through.
Notes
  1. *You can also play with whatever nut butters you'd like to use here. It obviously won't be an "almond butter chocolate chip cookie" then, but it will be delicious!
  2. **With 1 T. coconut sugar, it's not super sweet, but you get the mild flavor of the almond butter a bit more. If you want a sweeter cookie, use 2 T. Some days, you need some extra sugar.
  3. ***Use your judgment here. If you've made cookies before, you know about what cookie dough looks like. Depending on your flours, you might need a little more or a little less liquid. No matter what, you'll end up with a chocolatey cookie.

      Lighting – uhh. A lot of hoping that I didn’t wait till too late to shoot. 3pm by a window with a lot of parchment paper and a white t shirt around for brightness. #professional

    I feel you there friend. I’m thankful that we were created with emotions; it’s what makes us humans and so unique and so diverse. And it’s totally okay to cry. Sometimes I just break out and cry too, and those emotions are such a gift. It’s so much better than be toughened or hardened.

    Girl, I totally know what you mean with a random hit of sadness. Sometimes, I think living with a chronic illness affects us more than we even want to admit. Yoga, mom and chocolate are always my go-to solutions too! 😉

      Sooo true about the chronic illness thing. As if you don’t have enough to think about when you’re in your early 20s, try adding the fact that you’re going to be in pain/dealing with some big medical thing for the rest of your life. Blah. BUT there are good things, like moms and yoga and chocolate, that make it all a little better. Hugs to you!
