Hey hey! Happy Thinking Out Loud Thursday! I hope you’re enjoying a wonderful week and that all the crazy heat that hit just about everywhere earlier this month has calmed down for you. Unless you like that sort of thing. If so, teach me your ways. 

If you need a quick snack, I have some trail mix for you. And I think I’m going to go get some for me, too.

Alright, I’m back. Let’s get into what’s happening in my life and mind this week. You know, besides diving head first into snacks. Thanks for the link-up, Amanda!

1.) So I mentioned that the weather cooled down a bit, yeah? The weekend was AMAZING, and we had the windows all opened up in the house for the first time in months.

It was great. But… I have am going to complain about one thing: bugs. Guys, the second we open our house, despite having screens in the windows, teeny tiny bugs find their way in and basically devour me. I now have bug bites on my legs and chest and toe. Seriously. But the weather’s been pretty.

2.) So, pretty weather = lots of running, right? Um. Wrong. Last week was fabulous and I had four good runs. My knee then started giving me sharp pain on Friday afternoon and I took Saturday off. I got outside on Sunday and realized running wasn’t going to happen after about a half a mile and a giant spasm of my right leg. I got a little embarrassingly mad about this in the middle of the trail before walking it off and rubbing it out. I spent most of Sunday off my feet. After walking Pippa that night, it spasmed again and I could barely move my leg. Enter lots of heat and rolling and stretching.

Monday, I felt fine and was kinda stubborn/stupid. I ran a very, very slow 5K with a break to rub out my leg, which decided to tense up again. Tuesday, I wised up and didn’t run. I did talk to my excellent physical therapist, who gave me some advice about how to not overwork my leg between physical therapy and running. And then yesterday I magically ran the fastest, most comfortable 4 miles I’ve run in a long time.

All this to say, I have to accept that my body doesn’t always want what I want and I should get better at listening to it. Yesterday, it wanted to run. Sunday, it didn’t. I’m thinking I need to work on being a little more flexible and patient with myself. Maybe writing it out will help?

3.) For about as long as I can remember, when I’ve been at home, I’ve done my work on the couch. I have a nice desk in my room, my family has a desk in the den, and our kitchen table is fine, but I’ve always chilled out on the couch. For the past week or so, I’ve relocated to the den and I feel way more productive there. Also, it’s closer to the kitchen. #priorities

4.) When we want to go out for nice dinners in Columbus, my family’s go-tos are usually Cameron Mitchell restaurants. My mom had a gift card, so we tried a new (for us) one this weekend. Hudson 29 was amazing.

I ordered seared scallops with avocado, roasted golden beets, Campari tomatoes, and hearts of palm, all topped with mixed greens and golden balsamic vinaigrette. It was simple and perfect. My mom’s steak with tomato salad was equally awesome.

5.) My dad was out of town on a fishing trip with my grandparents until late Monday night, so I put off making a real dinner menu and grocery list for the week until Monday evening. I asked my mom what sounded good and she said egg-topped burgers.

Then, I mentioned that we had some crab in the fridge to use up, so she suggested crab scrambled eggs (which are amazing). 

I joked that it was going to be “egg week” in the house, and she said that was a great idea. So… I made up a menu of dinners that feature eggs. I like variety as much as the next girl, but I also think theme weeks could be a totally fun idea to continue. I’m torn.

6.) Yesterday, my mom promptly ruined postponed Egg Week because she’s popular and made plans with friends last night and tonight. My dad and I settled on Chipotle last night. Surprise, surprise.

7.) Speaking of friends, all mine are back in school. And all the local high schools are back in school. Aaaand I’ve got three weeks till I leave. But it’s okay. I have plans for my time, including plenty of experimenting in my big, non-apartment kitchen and some other blog work.

8.) Since he got home so late on Monday, my dad took Tuesday off work. It was nice to get to hang out with him after he’d been gone for a week, and we spent the day being productive together. We grocery shopped, caught up on our Sunday political shows, listened to a really good EconTalk podcast, got our vacuum cleaner fixed, and returned an unneeded modem to our cable company.

9.) I haven’t done a whole lot of cooking over the past few days, but I had two seriously disgusting bananas hanging around and I’d always rather use them than throw them away. I baked Kristy’s Healthy Paleo Banana Bread into two mini loaves (for about 40 minutes), and it’s delightfully dense while still being super moist. Pretty much what banana bread should be. Make it!

10.) And now I want to leave you with some of my favorite recipes + reads from the week.

    My favorite way to eat eggs is either an egg white omelet or a BLEAT/BLATE whatever. bacon lettuce avocado tomato egg. On toasted wheat. Gotta be runny. Frick on a stick now I want one.
    I’m sorry that your body is giving you some trouble but I think your attitude is spot on. This is why you started training early, after all–you knew that this would happen!

      Thanks, friend. I think I said I’d start early because of this, but I hadn’t really accepted that I’d actually need all that time. That’s what this week has been.

    Fried egg on a burger is amazing! I just recently got hooked. And isn’t it funny how you have certain spots in the house you are the most productive. I usually work on the couch because it’s comfortable, but am more productive when I’m sitting at a desk or table, no idea why though.

      Pretty sure I could put a fried egg on anything and love it a little more 🙂 And the comfort is why I always gravitated toward the couch, but I think that made me a little lazier when I sat there… whoops!

    The weather has been COLDER! Which is not fun…we actually could turn the AC off 🙁 I don’t want the summer heat to leave…but I think it’s coming back this weekend 😛
    And I’m an eat on repeat kinda person during the normal week. Good old favorites!

    I love a fried egg on avocado toast! I tend to eat things on repeat during the work week and go for variety at restaurants or on the weekends when i have more time!

      Eggs + avocado is AMAZING. I love each one individually so much, and then they just get even better when you put them together!

    Bahhaa I love how you call your bananas disgusting. Sometimes (rarely) I forget about bananas and I’m like.. yeahh I’m pretty sure you’re like, 2 minutes away from becoming some kind of banana liquor.
    also, don’t even get me STARTED on bug. I live in the woods. I hate bugs. The amount of times I’ve run around screaming “I DON’T DO BUGS.” is lost to me. I hate them, and they are ALWAYS in my house. I can’t even.

      I was honestly just too lazy to make anything with them for a little too long, and I was afraid they were too old to use, but it worked beautifully!
      Ughhhh I feel your bug pain and I don’t really even live near woods. Logically, they are tiny things that are a nuisance, but not harmful. But put me near them and logic goes out the window, and I’m certain they can kill me.

      Of course! I had no idea what it was going to be when I saw the title, but was all, “Oh, I’ve totally had cookies for dinner before. No big deal.” And then I found myself nodding along the whole way. Definitely food for thought and good lessons learned 🙂

    It’s cooled down a lot here too, but to the point where it’s almost a little TOO cold. Like… I had frost on my car windows the other morning 😯 I guess this is what we get for having such a nice early spring…

    I think my favorite way to eat eggs is the ones with runny yolks; sunny side up? 🙂 And I understand that longing for cool fall air; I hope the bugs lessen soon for you! Finding the best place to work is always a good way to get work done at home or else I’m always searching for the right place; it sounds like you found the best place for you; the comfy couch! 🙂

    Favorite way to eat eggs= an omelet with cheese and lots of veggies like peppers, mushrooms, spinach, tomatoes…sometimes I load mine up with so many veggies that it barely stays together!

    I’m back at school, too, and hope you enjoy your last few weeks of summer!

    It’s so crazy to me that I didn’t like eggs until this year! Now I eat them almost everyday. Fried (super runny) and poached are my favorite. Omelets are next. I’m such a creature of habit with food, out of laziness, sensitivities and taste preference, but I’ve been slowly adding more foods to test out my stomach. I like it so far!

      As long as you’ve come around to liking them now 😉 I always see your runny yolks and they look so perfect! It’s definitely nice to be able to branch out a little, but it’s good you know your safe foods for when that doesn’t go so well. Or when you’re feeling lazy.

    I pretty much rotate dinners most nights, and breakfasts now that I think about it. And actually, they are usually the same, breakfast and dinners haha. Always featuring peanut butter 😉

    you start school pretty late! I leave this Sunday. Those burgers with an egg on top sound so good! Fried eggs are the best 🙂 And I find I’m never as productive when it comes to doing things such as school work on the couch, but I love writing and blogging on it!

      Hahaha yeah, I’m on the quarter system, so we start at the end of September and get done for the summer in the middle of June! And yesss to fried eggs.

    Ummm boo to knee issues – and your Mom ruining egg week, haha! Jesse always ruins my theme weeks 😛

    I actually only like eggs when they’re mixed. I can’t do runny yolks or fried eggs but I lovee omelettes, frittatas, quiches and egg bakes!

      Egg week has since resumed 😀 Aaand even though he admits it’s been delicious, my dad has requested that we go back to consuming a wider variety of foods for dinner ?

    I can relate so much to the studying location struggle ? I have a perfectly good study to use and yet I always end up doing my work at my family’s kitchen table so I don’t feel lonely! And plus, it’s closer to the kitchen ??
